LDAP users require a "mail" field set, but is not documented anywhere.

Steps to Reproduce:

  1. Setup LDAP on GitLab like normal
  2. Have an LDAP user not have their "mail" field set (or any other email-like field)
  3. Sign into GitLab with that user
  4. Observe that you are asked to change your email to complete your profile, but you can't because LDAP users have their email field disabled

Steps to fix:

  1. Make the user have a "mail" field set
